Ghee is a cooking oil made by simmering butter for hours until all the moisture in the butter has evaporated. The remaining butterfat is then simmered further until the milk solids caramelize, and then filtered out - leaving a clear, golden liquid with a rich, nutty flavour and a higher smoke point compared to regular butter.
